DIY for CKD: Southwest Pasta Salad

Kidney Disease sucks so I’m finding recipes that don’t.

Starting off simple here with a pasta salad recipe. I’ve gotten so bored with eating lettuce for lunch and need to add in more carbs for my particular nutritional needs so I’m giving this one a shot.

I found the original recipe on Davita but tweaked it to my taste and what I had on hand.

Southwest Pasta Salad

Ingredients:

1 box (12oz) bow tie pasta

1/2 red bell pepper chopped

1 can no salt or sugar added corn, drained and rinsed

1 can low sodium black beans, drained and rinsed

1 zucchini quartered

1/4 onion diced

1/4 cup Parmesan cheese

2/3 cup Specially Selected Greek vinaigrette (Aldi)

1 tsp oregano

1 tsp paprika

1 tsp sriracha

Preparation

  1. Cook the pasta until tender. Drain.

  2. Drain and rinse the corn and black beans.

  3. Dice the bell pepper, zucchini and onion.

  4. Cook veggies for a few minutes till tender

  5. In a large bowl combine all ingredients and stir to combine.

  6. Refrigerate for at least 2 hours before serving.

Makes 12 ~3/4 cup servings

Overall, this is a good easy one to take to work with me that fills me up and is low protein and low sodium. I did find that I wanted it to have a tad more kick to it so I used some Dash Salt free southwest seasoning and that helps a TON.
