DIY for CKD: Vegetable Ramen

Kidney Disease sucks so I’m finding recipes that don’t.

Ramen is one of my ultimate comfort foods so finding one that fits into my renal friendly lifestyle was a must.

Nutrition content for this meal is pretty good- a little higher on the protein than I’d like but you can nix the soft boiled egg to cut a few grams. The potassium is pretty high so if you’re on a low potassium diet, this one may not be for you.

I made this recipe by following my heart, lol. Feel free to change up the veggies to what you like.

Please ignore that messy egg- it did its job.

Vegetable Ramen

Ingredients:

  • 1 cake Lotus Foods organic millet and Brown rice ramen

  • 1/8 cup red bell pepper thinly sliced

  • 1/8 cup grated carrots

  • 1/4 cup chopped broccoli

  • 1/8 cup thinly sliced mushrooms

  • couple pieces of baby corn-optional

  • shelled edamame- optional

  • 1 soft boiled egg- optional

  • 1tsp red pepper flakes

  • 1tsp salt free garlic and herb seasoning

  • 1tsp sriracha

  • 1 cup organic low sodium vegetable broth

Preparation

  1. Boil egg for 7 min, then place in ice water for 10 min. Peel

  2. Add vegetable broth, noodle cake, red pepper flakes, and salt free garlic and herb seasoning to a pot. Boil until noodles are finished.

  3. Chop and sauté veggies in olive oil until tender

  4. Add everything, including broth, to one bowl, drizzle with sriracha and enjoy!

Overall, this one will be in rotation quite often. It fills me up and hits the mark for me on most things.
